Healthified Pot Roast

After a day of flying, I wanted to do something simple, but wound up making pot roast!  I combined a recipe I found at Canyon Ranch and a recipe I found at Epicurious, mainly because I am allergic to the main ingredients found in pot roast (carrots and celery) so I made some modifications!

For a lighter side, I used organic, low-sodium chicken broth as my base with diced tomatoes, garlic, onion, and herbs.

In order to make it healthier, I also used more veggies and less meat!  Due to my allergies, I changed up the veggies to: green beans, red potatoes, onion, tomato, and mushrooms rather than the carrots and celery that are usually used.
