Black Bean Salad Recipe

Black Bean Salad

 

Chop up these ingredients and place in a large bowl (except cheese and tomatoes)

  • 1, 14.5 ounce can organic, salt-free black beans
  • ½ C thawed frozen corn
  • 1 C Cherry tomatoes, halved (hold in separate bowl and top the salad just before you eat so they don’t water down the salad and add to the salad when serving)
  • 1 Red pepper, medium sliced
  • 1 Yellow Pepper, medium sliced
  • ½ C Cucumber, peeled and chopped
  • 1 Orange Pepper, medium sliced
  • ½ C Red Onion, chopped
  • 1/2 C Jicama, chopped
  • ½ C Cilantro, thinly sliced

Mix in the bowl with the chopped veggies:

  • 1 Lemon squeezed
  • Black pepper to taste
  • Sea salt to taste
  • 1TB Extra Virgin Olive Oil
  • 2 TB Balsamic Vinegar (20 calories)
