APL Curried Vegetable Wrap
- 4 Corn Tortillas (heated up or toasted in a skillet before wrapping)
- 2 Cups Steamed Broccoli
- ¼ Cup Celery, chopped
- 1 Small Red Apple, sliced
- 3 TB Veganaise
- 1 TB Curry Powder
- ¼ Cup Red Grapes, seedless and halved
- Steam the broccoli then mix it in the bowl with the remainder of the ingredients. Mix well, then divide into two portions and wrap up one for the next day.
- Heat the tortillas. Place half of the remaining veg mix on one and the other half on the other.
