APL Healthier Super Bowl Snacks Fox Segment 1/28

Hey all!  We had a BLAST (as per usual) at Fox 32 News Chicago with Corey McPherrin (and Melody Mendez as she ran in mid-segment to munch on some of our apps!)  You can see the giggle fest in our pics below as well as the video link and the recipes!  The goal? Stay healthy this Super Bowl without sacrificing flavor with our recipes and grab pre-made guacamole and grilled veggies from Plum Market Chicago in Old Town to cut down on cooking time.

  APL 5-Layer Dip:

2 Cups Red Quinoa, cooked2 Cups Salsa, flavor-of-choice (add a spicy salsa for more flavor)
2 Cups Prepared or Homemade Guacamole (check out the APL Guac!)
2 Cups (or 2 cans) Amy’s Organic Black Refried Beans
2 Cups Shredded Romaine Lettuce (more nutrients than iceberg!)
Top it with jalapeno or scallion slices if you like and serve heated or chilled
Serve with the guilt-free PopChip Tortilla Chips

Layer each ingredient in a glass serving piece and serve with veggies or chips to dip

APL Baked Buffalo Chicken Wings

2 LBS All-Natural Chicken Wings
1 Bottle Organic Buffalo Sauce
2 Cups APL Herbed (Dairy-Free) Ranch Dressing 

Place the wings in a Ziploc bag and pour the bottle of buffalo sauce over them.  Zip the bag closed and shake to coat each wing.  Refrigerate over night or for a minimum of one hour.
Preheat the oven to 425 degrees.  Shake the wings onto an aluminum-foil covered baking sheet and bake for 20-25 minutes or until a meat thermometer registers 165 degrees. Serve drizzled in buffalo sauce and with out healthier ranch dressing!

Chili-Garlic Popcorn

6 Cups Popcorn, plain and air-popped
3 TB Garlic Powder
3 TB Chili Powder
Coconut Oil Cooking Spray

Place the popcorn in a bowl (deep) and spray it with the coconut oil cooking spray, mix it around and make sure all of it is sprayed.
Then, place it in a Ziploc bag or large Tupperware container, drizzle with the chili powder and garlic powder, shake until coated.  Voila!

Super Bowl Dessert Team Trifles: You can make these any way you want, we chose to layer KIND Snacks Whole Grain and Gluten-Free Maple-Oat Granola with our dairy-free cream cheese “fluff” and 1 with orange slices (for the Broncos) and one with blueberries (for the Seahawks!)

2 Cups KIND Snacks Whole Grain/Gluten-Free Maple Quinoa Clusters (1 cup per mason jar, 1/2 cup per layer)
2 Cups Blueberries
2 Cups Orange Slices
Cinnamon
2 tubs Toffutti Cream Cheese, softened
1 1/4 tsp Stevia, clear liquid
1 tsp Pure Vanilla Extract
4 TB Hemp Milk, unflavored

Mix together the toffutti cream cheese, stevia, vanilla, and hemp milk with an electric blender until soft like fluff!
Slice up the oranges and top them with dashes of cinnamon, set aside.
Layer 1/2 cup of the Kind clusters, then 1 cup of the berries, topped with 1/2 cup of fluff, and repeat one more time to fill a 32-ounce mason jar.
Repeat above with the oranges.
