Power Up With Our Favorite Super Filling Salad

INGREDIENTS

  • 2-3 Cups Mixed Greens of Choice (we used a mixed baby kale & spinach)
  • 1/2 Cup Cherry Tomatoes, halved
  • 1/2 Cup Cucumber, peeled and sliced
  • 1/3 Cup Julienned Carrots
  • 1 Green Onion, chopped
  • Half of an Medium Avocado, sliced
  • 1/4 Cup Organic Garlic Hummus (buy or make your own!)
  • 2 TB Peruvian Botija Olives, sliced
  • Optional: ¼ Cup Sprouted Brown Rice
  • Topped with Lemon-Tahini Dressing:
  • 1 TB Chia Seeds
  • 1/4 Cup Raw Tahini
  • 1/2 Cup Fresh Lemon Juice
  • 2 Garlic Cloves, minced
  • 1/4 Cup Nutritional Yeast (no dairy free? Use plain Greek Yogurt)
  • 3 TB Cold-Pressed Extra Virgin Olive Oil
  • Sea Salt & Black Pepper, to taste
  • 4-5 TB Water

INSTRUCTIONS

  1. Prep the salad ingredients and place them in a bowl and top with 2-3 TB of the dressing. I save the dressing in a mason jar and use it to dip jicama and lackers in as a snack the next day!
