APL Fresh Greek Bowl

INGREDIENTS

  • 1/2 Cup Quinoa, cooked
  • 1 TB Kalamata Olives, chopped
  • 1 TB Feta
  • 1 TB Fresh Mint, chopped
  • 1/2 Cup Organic Cherry Tomatoes, halved
  • 1/2 Cup Organic Cucumber, peeled, sliced and then quartered
  • 1/2 Cup Kale Microgreens
  • 1/2 Cup Sliced Onion, grilled
  • 1/8 Cup Organic Hummus
  • 3 Slices Meyer Lemon, grilled

INSTRUCTIONS

  1. Just cook the quinoa according to package instructions, chop and measure out the rest, and mix it all together!
