Middle-Eastern Fatoosh Salad with Greek Yogurt Dressing

INGREDIENTS

  • 1 cup organic cucumber, peeled and chopped
  • 1 cup organic tomatoes, chopped
  • 1 cup organic radishes, chopped
  • 2 scallions, sliced
  • 1/4 cup green olives, sliced
  • 1/4 cup fresh mint, chopped
  • 1/4 cup organic whole milk Greek yogurt
  • 2 TB fresh lemon juice
  • sea salt & pepper, to taste

INSTRUCTIONS

  1. Chop all of the veggies and lightly toss in a bowl with the yogurt, lemon juice, salt & pepper.
  2. Serve with grilled pita wedges or in our Chickpea Crepes!
