August Is National Sandwich Month

We here at APL love the open-faced sandwich. You skip a piece of bread loaded with added calories, but still get the taste and feel of eating a sandwich! August is National Sandwich Month, so we are including you in our secret APL kitchen go-to’s for 1-slice wonders!

FRUITY CHICKEN SALAD: Make the APL Dried Apricot, Fennel, & Apple Chicken Salad and place 1/4-cup of it atop a piece of toasted millet bread with a handful of kale or broccoli micro greens.

PESTO & VEG: Toast a slice of millet bread and top it with 1 TB of the APL Nut-Free Pesto a pan-grilled slice of eggplant, zucchini, onion, and tomato, then drizzle some balsamic syrup on the top.

GREEK PITA POCKET: On a pan-grilled piece of gluten-free pita (we love Heaven Mills,) put 2 TB of hummus, 4 sliced Kalamata olives, 1/2 Cup Shredded Romaine (grill it if you want something new,) 4 sliced cherry tomatoes, 4 slices grilled onion, a handful of kale or broccoli micro greens, & an optional 1/4 cup of white organic tuna.

AVOCADO-STRAWBERRY: on a slice of toasted millet bread or gluten-free whole grain french bread, put 1 TB organic (full-fat) cream cheese or creme fraiche, top with 6 slices of green onion, 3 slices of avocado, 4 slices of strawberry, a sprinkling of cilantro, 1 tsp of lime juice, a bit of lime zest, and a pinch of sea salt.
