Super Simple Kelp Noodle Salad

INGREDIENTS

  • 1 package kelp noodles
  • 1/2 small head red cabbage, shredded
  • 1/2 cucumber, peeled, sliced, then quartered
  • 4 TB mix of raw white & black sesame seeds
  • 3/4 cups shredded carrots
  • 3/4 cup broccoli florets, lightly steamed
  • 3/4 cup baby bok choy, lightly steamed
  • 1/2 cup shiitake mushrooms, lightly steamed
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, coarsely chopped
  • 1/2 cup avocado, diced
  • Bragg's aminos
  • ginger
  • red pepper flakes

INSTRUCTIONS

  1. Rinse the kelp noodles, pat dry, cut into shorter noodles, then set aside in a large bowl.
  2. Prep all veggies- lightly steaming the broccoli, mushrooms, and bok choy (we use a bamboo steamer)
  3. Toss all raw veggies (less the avocado & cilantro) into the large bowl with the noodles, then add the steamed veggies, mix. Toss the the sesame seeds in. We used 1/2 cup Bragg's, 2 TB minced ginger, and 1 1/2 TB red pepper flakes for our sauce. Add more, to taste, if needed. Top with avocado and cilantro when serving.
