Alkalizing Broccoli Soup

Ugh, I caught my husband and daughter’s nasty cold, so I am healing myself through food. On the enu tonight was a new concoction that is fully alkalizing and throat-soothing soup! Try it for a healthy boost this wintery season!

Alkalizing Broccoli Soup

INGREDIENTS

  • 1/2 red onion, chopped
  • 2 cloves garlic, chopped
  • 1/4 TB fennel seed
  • zest from a lemon
  • juice of a lemon
  • 2 cups broccoli florets, cut small
  • 2 cups organic vegetable stock (or make your own)
  • 1 TB virgin coconut oil
  • 2 cups organic napa cabbage, shredded
  • 1 3/4 cup organic coconut milk

INSTRUCTIONS

  1. In a stock pot, heat the coconut oil over medium heat for 30 seconds.
  2. Meanwhile, steam the broccoli
  3. Toss the onion, garlic, & fennel seeds in and cook until onions are translucent- roughly 4 minutes.
  4. Add in the broth, broccoli, cabbage, and lemon- heat through until warm. Remove from the stove and let cool about 10 minutes.
  5. Blend the soup in a blender until smooth, serve with lemon zest and some Celtic sea salt & pepper, to taste.
