Goji Berry Super Food Pancakes


Superfood Goji Berry Pancakes

makes 1 serving, 2 pancakes

What You Need:

  • ½ cup gluten-free oat flour
  • ½ cup unsweetened hemp milk
  • 2 TB flax meal
  • 6 TB warm water, filtered
  • 1 TB lemon juice
  • 1 tsp Spirulina
  • 2/3 medium banana
  • ½ tsp pure vanilla extract
  • ½ tsp cinnamon, ground
  • coconut oil, to cook
  • Toppings: sprinkle of cacao nibs, 4-5 banana slices, drizzle of coconut nectar, + 1 TB hemp hearts

To Make:

  1. In a blender, mix together the goji berries, hemp milk, + lemon- refrigerate for 5-10 minutes.
  2. Make the “eggs” by mixing the flaxmeal with the water – let sit to thicken.
  3. In a large mixing bowl, blend all of the dry ingredients. Add the milk mixture and then the eggs- mix well.
  4. Heat 1 tsp of coconut oil in a skillet over medium heat for 30 seconds, then ladle two pancakes into the pan and cook until lightly browned on both sides.
  5. Enjoy with tasty toppings!
