Color-Me Crazy Salad with Sesame-Lime Dressing

Yield: 1 salad

Serving Size: the whole bowl!

INGREDIENTS

  • 1 cup hand-torn baby kale leaves
  • 1-1 1/2 cups mixed veggies (APL used: chopped red & yellow bell pepper, sliced radish and daikon radish, chopped cucumber, & shredded carrots)
  • 1/4 cup edamame, steamed & shelled
  • 1/4 cup sprouted brown rice or quinoa, cooked
  • bean sprouts, washed & thrown on top
  • sesame-lime dressing:
  • 2 TB chopped cilantro
  • ½ TB sesame oil
  • ½ lime
  • 1/8 cup avocado oil
  • 1 TB brown rice vinegar
  • 1 small minced garlic clove
  • 1 tsp minced fresh ginger
  • red pepper flakes to taste (want it really spicy? Try dried red thai chiles, crushed)

INSTRUCTIONS

  1. Place hand-torn baby kale in a medium-sized bowl and mix in the 1-1 1/2 cups chopped veggies.
  2. Mix in the cooked brown rice or quinoa and edamame.
  3. Top with bean sprouts and salad dressing- mix well & enjoy!
