Tax Day Tini’s: healthier cocktailing with APL

Just so happens that April is National Stress Awareness month AND tax day falls mid-month as well…no coincidence, right? I think this means we should all indulge a bit in an April 15th Tax Day Tini’ created by APL to make for a guilt-free, but fun cocktail hour after submitting those finances. Check out our recipes below for our ultimate faves!

Vodka-Lime Tartini: 

  • 1 shot gluten-free vodka (Tito’s is bananas good)
  • juice of 2 small limes
  • cold lime La Croix, to top
  • lime wedge, to garnish

Chill a martini or low-ball glass. In a shaker, shake together the vodka, lime juice, and some ice – pour through a strainer into your glass, top with La Croix, & garnish with a lime.

TIP: to change the flavor- make the same with lemon or grapefruit too using Pamplemousse or lemon La Croix and the juice from fresh grapefruit or lemons!

Tequila Time Tini-Rita: (margarita-martini mixed)

  • 1 shot top-shelf tequila
  • 1/2 lemon, juiced
  • 1 lime, juiced
  • 1/2 cup ice
  • 1 TB coconut nectar
  • Himalayan crystal salt

The only thing that really makes this drink a martini is the glass, let’s be honest!  But, we love it! In a blender, blend the ice, lemon & lime juice, and coconut nectar.  Rub the rim of a glass with a lime wedge & dip into a small bowl of HCC, then pour the blended drink into it & top with the tequila (we like to mix it ourselves after blending.) Don’t want it blended? Just shake it all in a shaker with the tequila in it & pour over the ice.

Strawberry-Basil Mid-Day Mimosa: (ok, not a tini either, but we HAD to include our fave beverage, champagne, in the mix!)

Submit those taxes early? Nice job! A lunchtime cocktail might be in order and we strongly suggest this strawberry concoction!

  • 2 organic strawberries, tops cut off & sliced
  • 1 TB fresh, organic basil, chopped
  • 4 oz dry (brut) champagne, not prosecco people
  • 1 tsp coconut nectar
  • strawberry slice to garnish

In a bowl, muddle together the strawberries and basil. Pour in the coconut nectar and mix well until liquidy- strain into a champagne glass & pour champagne over the mix and garnish with a sliced strawberry. YUMMINESS!
