Goji Berry Beauty Bowl

Another Big Bad Ass Bowl from the APL Kitchen is here! Man do I love tossing ingredients into a pretty bowl, adding some superfood nutritious goodness, + topping it with a tasty dressing or simple sauce and devouring it without ANY guilt! Check out our latest creation – it is bananas.

What makes this a BEAUTY bowl:

We are big into beautifying foods at APL because we love that what makes us healthy on the inside shows up and makes us glow and radiate health on the outside. I mean, saves us a bundle on fancy creams to do it for us, right?!? Check out the beauty foods inside this tummy-pleasing bowl of goodness.

Goji berries: 

These sassy lil’ ladies are jam-packed with antioxidants and are often referred to as the “Fountain of Youth” fruit. Actually, Goji berries, who originally hail from Asia, are considered a fruit AND an herb and have been used for thousands of years for medicinal purposes in China. They are loaded with beta-carotene, which promotes healthy and glowing skin…hence the “beauty” bowl. The seeds inside of them have fiber for our digestive system and the berries are also a great source of immune-boosting vitamin C. Aside from their nutritional value, they add a bit of sweetness and a fun texture to any meal.

Radishes:

A member of the mustard family (see the leaves- they do look like mustard greens,) these little bad boys are quite possibly one of the most beautifying foods on the planet! They fly so far under the radar, I am shocked more people aren’t grabbing them up and devouring them on-site with all of their incredible benefits. They have a lot of sulfur and silicon-it is rare to find both minerals in one veggie- and  contain one of the highest vitamin C levels for a veggie as well. These three minerals will just make you GLOW all over. Silicon, which you may not know a lot about, is a mineral that is MANDATORY for your inner + outer glow because it helps with your skin (works with elasticity in the skin keeping it thick – it thins out as we age =  young + fresh looking,) hair (improves shininess and density,) nails (hello long + strong nails,) teeth (prevents cavities + gum disease = beautiful smile,) bones (supports growing + healing,) muscles, tendons,connective tissue, blood vessels and ligaments…that is a laundry list. They say the more silicon, the younger you look. I will not argue with eating my way to a younger complexion! Sulfur, also a mineral that invokes beauty inside of us, promotes collagen and elasticity. Yep, say goodbye to wrinkles my loves! A compound of sulfur is glucosamine, which gives cartilage its strength, structure, + resilience so we can keep working out with APL! Not to mention, keratin. Yes, that expensive shit you treat your hair with? Well, that fibrous protein is in sulfur and it will help your hair AND your nails – making hair lustrous and nails strong. Aside from taking away that Shar Pei-like wrinkly skin wrinkles brings on, it also can clear up acne blemishes. I can’t write any more…but there are a plethora of additional health benefits. You should be totally sold by now though…

I bet you are hungry now, so let’s just make the dish already!

The base is simply 1 1/2 cups shredded red cabbage (um, obviously a fave of ours, you can also use beauty-inducing watercress or live pea tendrils or even baby kale lettuce)

Super Tasty Toppings:

  • 1/8 cup fresh cilantro, hand torn
  • 2 TB scallions, sliced
  • 3 purple radishes, well-cleaned + sliced, then quartered
  • 1/4 cup orange bell pepper, diced
  • 1/2 small avocado, diced
  • 1/4 – 1/2 jalapeno, chopped + seeds removed
  • 2 TB goji berries

Simple Dressing: 

  • 1 TB hemp seed oil (we love Sunfood’s)
  • 1 TB Bragg’s liquid aminos
  • 1/2 lime, juiced
  • 1/2 – 1 TB raw tahini or sunflower seed butter
  • Optional: 1 tsp liquid vitamin E (for an added beauty bonus!)
