Fig + Fennel Salad

When I was perusing Whole Foods for some fresh produce, I found some yummy stuff in the form of figs, taro root, fennel, and more…I love combining flavors, so I decided to pair the sweetness of the fresh figs with some cooling fennel, baby ok choi, broccoli greens, + a light champagne vinaigrette. This salad was not only mmm mmm good, but it was filled with beauty-inducing nutrients and health benefits.

To Make the Salad:

  • 3 fresh figs, halved
  • 1 small fennel bulb, sliced into thin slices
  • 1 cup baby pok choi (or mixed teeny tiny baby greens)
  • 1 cup broccoli greens, hand-torn

To Make the Dressing:

  • 1 TB avocado oil, cold-pressed
  • 2 TB champagne or ACV
  • 1 TB mustard
  • 1 small garlic clove, minced
  • dash of coconut nectar
  • dash of Himalayan crystal salt
  • squeeze of a lemon
