Yum, Yum Taro Root Chips

This is taro root- looks like a sweet potato-shaped coconut! Just peel it, slice it, and roast-it-up for a more nutrient-densepotato chip replacement! Although still carb-heavy, this root has more health benefits than a simple white potato, like a high dietary fiber content, vitamins A + C, potassium, and even cancer-fighting rytoxanthin. Keep the servings small, around 1/4-1/2 cup per serving.

For the tasty chips:

  • 3 medium taro root, peeled and sliced
  • 1 TB raw coconut oil
  • Himalayan crystal salt

To Make:

  1. Preheat the oven to 400 degrees
  2. Place the taro on a baking sheet, brush with the coconut oil, then top with a few dashes of salt. Roast for 20-25 minutes or until browned.
  3. We served them with some spicy Harissa!
