Perfectly Made Pitaya Parfait

Pitaya…it’s like a love story in our house because we have found so many fun ways to make this sweet + nutritious fruit and we just keep going! The possibilities are endless, but for now, we will share with you our ridiculously amazing treat in the form of a perfect (and healthy) parfait!

The yummy ingredients:

  • 1 packet Pitaya
  • 1 banana
  • 1/2 cup coconut water, raw
  • coconut nectar, to sweeten
  • 1/4 tsp vanilla
  • cacao nibs
  • unsweetened shredded coconut
  • optional: blueberries

To Make:

blend the first 5 ingredients in a high speed blender and then place the blender in the freezer for 1-2 hours until thickened. Top with cacao nibs, shredded coconut, + fresh blueberries!
