Coconut POWER Granola

Who doesn’t want a little crunchiness on their oats or superfood smoothie bowls in the morning. APL made this amazing granola last night while we worked on some nutrition blogs for you all and our house smelled incredible! It’s a must-make  With gluten-free oats, goji berries, raw pumpkin seeds, _+ more…this dish is FANTASTIC for you food!

What you need to make it!

  • 2 cups gluten free oats
  • 1 cup unsweetened coconut, shredded
  • 2/3 cup raw pumpkin seeds, preferably sprouted
  • 1/2 cup goji berries
  • 1/4 – 1/2 cupcoconut nectar
  • 4 TB hemp hearts
  • 3 TB maca powder
  • 1-2 TB cinnamon
  • 1 tsp vanilla extract
  • pinch of Himalayan salt
  • 1 cup filtered water

How to Cook It Up!

Want it raw? 

Mix everything together in a bowl, except the water. Slowly add the water in and stir it around. Line a baking sheet or a dehydrator tray. Dehydrate at 105 degrees for 8-12 hours, depending on how dry + crispy you like it. I like it at about 8-9 hours.

Want it baked?

Fire up the oven at 300 degrees F and bake it on a parchment-paper lined baking sheet for 45-60 minutes
