Raw Arugula + Peach Coconut Wrap

There is nothing like a light, summery lunch! Today we basically threw a bunch of tastiness together on top of a @sunfood coconut wrap (raw, gluten-free, non-GMO amazingness.)

It’s a busy workday for APL, so when I swept my way through the kitchen, I went to work making these babies, sat down, enjoyed them, and was out the door in under 10 minutes. Now, THAT’S and easy lunch!

For the Wraps:

Simply plop down 2 coconut wraps on a plate. top them with a large handful of arugula each, slice half of a peach and put 2-3 slices on each, cut 1/2 cup of corn off of a fresh cob and divide amongst the two, top each with 3 slices from a jalapeño, + 3 slices of fresh avocado, then sprinkle with hemp hearts. The sweet lime vinaigrette we used is simply 1 TB avocado oil mixed with 1/2 lime, juiced, + 2 tsp coconut nectar. DONE!!!
