Teriyaki Roasted Cauliflower Bowl

Cauliflower is filling! Like a big, FAT steak. Well, sort of…This Teriyaki roasted cauliflower served over sprouted volcanic red rice, steamed edamame, red + yellow bell pepper, + scallions, all topped with avocado + heart-healthy hemp hearts is hearty AND healthy! Teriyaki Roasted Cauliflower Bowl

makes 1 serving

What You Need:

  • 1/2 small head of organic cauliflower, cut into florets
  • 2 tsp coconut oil, melted
  • 2 TB Coconut Secret Teriyaki Sauce
  • 4 TB steamed edamame
  • 1/2 cup organic red + yellow bell pepper, chopped
  • 1/8 cup scallions, chopped
  • 1 TB hemp hearts
  • 3 slices avocado
  • 1/2 cup steamed, sprouted volcanic red rice (we heart Lotus Foods)

To Make:

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and place the florets on top- brush them with the melted coconut oil. Roast until lightly browned- roughly 10-12 minutes.
  2. Meanwhile, steam the rice + edamame, chop the bell peppers, scallions, + slice the avocado.
  3. Place the rice in a big bowl, top with the cauliflower, bell pepper, edamame, + avocado. Top with the scallions, hemp hearts, + teriyaki sauce.
