Fox News Chicago: 4 Super Tasty, Creative Slow-Cooker Meals

Tis’ the season for slow cooker recipes, but not the same old Fall favorites like chili. We’ve changed-it-up and partnered a lean protein option with smart sauces + food items that volumize the meal in minutes without a lot of prep to get to the plate. Tikki Masala Chickpeas + Sprouted Brown Rice

3-ingredient meal? Well, hello budget! Once you have a protein source, like this plant-based legume, you just need a tasty sauce. We LOVE Saffron Road’s tikki masala because it is an authentic Indian sauce full of flavor. Being all-naturel, made with non-GMO ingredients, gluten-free, + vegetarian with just 20 calories per serving…it’s a total WINNER! And, add into that the convenience + utterly soft 100% whole grain sprouted brown rice from Annie Chun + you are in the quick-cooking kingdom thanks to it’s 1-minute cook time.

What You Need:

To Make:

  1. Simply toss the drained chickpeas + masala sauce in the slow cooker + cook on low for 5-6 hours.
  2. When ready-to-serve, heat the rice bowl for 1 minute in the microwave + plate 1/2 of the container with 1/2 cup of chickpeas on top.

Teriyaki Chicken with Pineapple + Broccoli

Filling + fabulous should be this dishes tagline thanks to the cruciferous veg broccoli, but the real kicker is this is not your run-of-the-mill chicken dish thanks to SAN-J’s gluten-free, all-natural teriyaki sauce that’s a true, rich authentic Asian taste without gluten, GMO’s, preservatives, or additives. The pineapple is a given since it’s my absolute favorite teriyaki topper.

What You Need:

  • 2 skinless, boneless chicken breasts
  • 3/4 cup pineapple, chopped
  • 1-2 cups broccoli florets
  • 1/2 bottle of SAN-J teriyaki sauce
  • couple dashes of water

To Make:

  1. Place all ingredients into the slow cooker and cook on low for 5 hours. Serve as-is!

Buffalo Chicken Meatballs

Duh, it’s football season! Serve these as an app or a main dish any Sunday this season!

What You Need:

  • 2LBS lean ground beef or turkey
  • 2 pasture-rasied eggs
  • 1 cup gluten-free bread crumbs
  • 1/3 cup onion, minced
  • 1/2 cup coconut milk
  • 1 TB brown sugar
  • 1 tsp garlic, minced
  • 1 tsp onion powder
  • 1 tsp sea salt
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp crushed black pepper
  • 1 cup buffalo sauce, plus extra to dip in or drizzle with when serving

To Make:

  1. Preheat oven to 450 F degrees. Line a rimmed baking sheet with foil. Set aside.
  2. In a large bowl, add eggs and gently whisk. Add all remaining Meatball Ingredients and mix until well combined. Roll meat mixture into desired meatball size**. Place meatballs onto prepared baking sheet and bake for 8 minutes, or until lightly browned.
  3. Meanwhile, add all of the Honey Buffalo Sauce Ingredients to a medium bowl and whisk to combine (only use ¼ cup hot sauce at this point. You can add more hot sauce to taste at the end of cooking).
  4. Line the bottom of your slow cooker with meatballs, drizzle with some Honey Buffalo Sauce, then remaining meatballs followed by the remaining Sauce.
  5. Cover and cook on low heat for 2 hours, gently stirring an hour after cooking. When done, taste and stir in additional hot wings sauce (I add 1 ½ more TB which is pretty spicy.) Keep warm until serving.

Turkey-Bacon Sloppy Joe’s

What You Need:

  • 1 LB ground turkey meat
  • 3 slices bacon
  • 1/2 onion, thinly sliced
  • 3/4 cup ketchup
  • red pepper flakes, to taste
  • 1/2 tsp dry mustard
  • dash of Worcestershire sauce
  • 1 TB brown sugar or pure maple syrup
  • 1 tsp chili powder

To Make:

  • Mix together the sauce ingredients in a small bowl while lightly browning the onions with the bacon in a skillet of medium heat.
  • Place the turkey, onions, bacon, + sauce in a slow cooker + cook for 2 hours on low.
  • Plate with lettuce cups instead of on buns + add a side of veggies or baked sweet potato fries!
