The “Un-Pizza” Finger Food

“I am hankering for a pizza.” This is something that I say on the regular, I  mean, who doesn’t? But, come one, we can’t just hoover a plate of cheese + bread when we want unless we’re running weekly marathons.  So instead of a greasy, round pie, I made this kale-based pizza. Finger food- woot!

I simply pan-grilled 2 cups of purple and green kale with a bit of cold-pressed extra virgin olive oil + a small clove of minced garlic, then tossed in some Kalahari desert salt and plated it.  I added 6-7 apple slices, 2 Applegate bacon slices, and 1/2 cup asparagus spears chopped (tops only.) Pan-grill until browned- roughly 5-6 minutes, then add in 3 lemon slices to grill. Place it all on top of kale and then place 1 TB of hemp hearts + a drizzle of balsamic syrup.
