Bacon-Wrapped Pineapple Chipotle Salad

I could legit put bacon in EVERY dish I make in the APL Kitchen. Applegate is my go-to bacon brand and wrapping it around sweet pineapple just makes it even better!

Bacon-Wrapped Pineapple Chipotle Salad

makes 1 salad

What You Need:

For the Salad-

  • 3 slices applegate bacon
  • 6 slices pineapple
  • 1 1/2 cups cabbage, shredded
  • 1 TB scallions, sliced
  • 4 slices avocado
  • 1 TB cilantro, chopped

For the Chipotle Ranch Dressing (vegan) –

  • 1 cup veganaise
  • 1 cup hemp milk, unsweetened
  • 1 lime, juiced
  • 1/2 lemon, juiced
  • 1 clove garlic, minced
  • 2 TB shallots, chopped
  • 1/2 TB chipotle chili powder
  • 1 tsp paprika
  • 1/4 tsp sea salt

To Make:

  1. Wrap 1/2 slice of bacon around each piece of pineapple + pan-grill until cooked through.
  2. Meanwhile, in a blender, toss all of the salad dressing ingredients + blend until smooth.
  3. Place salad ingredients on a plate, top with the bacon-wrapped pineapple + 2 TB dressing.
