Fig-Stuffed Grilled Eggplant

makes 2 servings

  • 1 eggplant, cut in half + brushed with extra virgin olive oil
  • 3 TB tahini
  • 2 figs, halved
  • Drizzle of balsamic syrup
  • optional: put some Harissa on top

To Make:

  1. Preheat the oven to 350 degrees
  2. Place the eggplant on a baking sheet + bake for 30-35 minutes
  3. Remove from the oven, top with tahini, figs, + balsamic syrup – enjoy!
