Jalapeno-Spiced Cornbread Protein Waffles

What You Need:

  • 1 cup medium ground, gluten-free cornmeal
  • 1 cup gluten-free all-purpose flour
  • 1/4 cup granulated sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 cup pepper jack cheese
  • 1/4 cup scallions, sliced
  • 1 jalapeno, chopped
  • 2 eggs
  • 1 cup unsweetened hemp milk
  • 4 slices bacon, low-sodium, cooked + chopped
  • 2 scoops unflavored protein powder

To Make:

  1. Mix all of the dry ingredients into a large bowl, then add in the wet ones, pour into the greased waffle maker + make 3 rounds (6 waffles.)
