Buying rotisserie chicken, removing the skin, + hand-shredding it has saved me so much time and sanity in the kitchen! This salad is easy because of that + you have the time leftover to prepare your own fresh dressing!

For the Salad
1 cup Napa cabbage, shredded
1 cup purple cabbage, shredded (quick tip: can be bought pre-shredded)
½ cup pea shoots or watercress
¼ cup edamame, shelled
2 tbsp mandarin oranges (in water, no syrup)
2 tbsp hemp hearts
1 ½ cups rotisserie chicken
⅛ cup scallions, chopped
6 jalapeno slices
½ cup carrot, shredded (quick tip: it comes pre-bagged this way)
For the Dressing
2 large carrots, peeled + chopped
2 tbsp ginger
⅓ cup avocado oil
⅓ cup rice vinegar
1 ½ tsp sesame oil
2 tbsp lime juice
1 ⅓ tbsp honey
1 Chop all of the veggies as indicated.
2 Place all of the ingredients for the dressing into a blender + blend until smooth.
3 Literally just mix the salad ingredients together + top with dressing!
