Asian Chicken Chopped Salad with Carrot-Ginger Dressing

Buying rotisserie chicken, removing the skin, + hand-shredding it has saved me so much time and sanity in the kitchen! This salad is easy because of that + you have the time leftover to prepare your own fresh dressing!
For the Salad
1cupNapa cabbage, shredded
1cuppurple cabbage, shredded (quick tip: can be bought pre-shredded)
½cuppea shoots or watercress
2tbspmandarin oranges (in water, no syrup)
1 ½cupsrotisserie chicken
½cupcarrot, shredded (quick tip: it comes pre-bagged this way)
For the Dressing
2large carrots, peeled + chopped
1 ½tspsesame oil
Chop all of the veggies as indicated.
Place all of the ingredients for the dressing into a blender + blend until smooth.
Literally just mix the salad ingredients together + top with dressing!
Serving Size 1/2 salad
