Taco me! Nearly every Tuesday I prep some sort of taco dinner. They are simple, straight forward, work well for the whole family, and can easily be made healthy. Here are my top 4 of 2019.
FISH TACOS: This is my blackened fish (I use cod or mahi mahi, whatever is most fresh at the time) pan-grilled with spices + a dash of oil. A side of cabbage leaves to wrap it up with radishes, slaw mix, avocado, yellow tomatoes, + a spicy remoulade sauce.
QUICK CHICKEN TACOS: A weeknight wonder, this dish is made using rotisserie chicken (remove the skin + hand shred slices.) with purple cabbage, shredded carrot, diced avocado, prepared slaw, + grilled bell pepper slices. Made with coconut wraps (or sprouted corn tortillas.) My chipotle crema is made with 1/4 cup plain Greek yogurt, 1/4 cup paleo mayo with 1 (or 2 if you like spicy) chopped chipotle pepper(s) in adobo sauce.
PALEO STEAK TACOS: A seriously paleo-driven taco format, this chipotle skirt steak is wrapped around simply grilled bell peppers, scallions, + pineapple. I serve it with a side of pico de gallo, cilantro, + spicy corn dip.
CRAB + LOBSTER TACOS: I love lobster +/or crab meat in just about anything! These simple tacos are incredible with cilantro, shredded cabbage or lettuce, + any toppings you’d like. With crab and lobster, I keep the add-ons mild-flavored + simple to make the full flavor of the seafood the focus. I then use a simple sauce like a chimmichurri sauce. Simple pan-grilled corn tortillas are a great wrap!
