For those of you who try to limit dairy, but not completely erase it from your life, try this sauce for your next veggie noodle dish or to top a protein + veg bowl.

Coconut Milk-Based Alfredo Sauce

makes 6 servings

What You Need:

  • 1 cup full fat coconut milk
  • 2 garlic cloves, minced
  • 4 TB Earth Balance avocado “butter” spread
  • 1/2 cup parmesan cheese, grated
  • 1 tsp sea salt
  • 1 tsp red pepper flakes

To Make:

  1. In a saucepan over medium heat, combine all ingredients, bring to a boil, then simmer for 10-15 minutes or until it thickens.

HOW-TO USE:

I took 6 cups of zucchini noodles + topped it with the warm sauce, a LB of prepared + chopped pancetta, + 1 yellow onion; sliced + caramelized. THIS IS STILL A SPLURGE!
