LWA x IGTV: Chef Grady’s TDF Pineapple Veggie Bowls and Chicken Thighs Over Cauliflower Rice

I had a blast being schooled by @chefgrady1 in my kitchen. Not only is this talented private chef a super charming duded, but he also knows how to cook HEALTHY! These dishes were beyond tasty, have lots of nutrient-dense veggies, turn out gorgeous on the plate, and were not too difficult to prep- AT ALL. Chicken Pineapple Veggie Bowl

makes 2 servings

  • 1 cup white (I prefer you use brown!) rice – in a pinch on time? Try these instant brown rice bowls
  • 1lb chicken thighs
  • 1 pineapple – watch the video to make it into a bowl
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion; diced
  • micro greens; for garnish
  • Drizzle of Woo Sauce – he won’t tell me the ingredients people…but, I would suggest a teriyaki sauce or a combination of 4-5 TB of pineapple juice or blended pineapple with with 1/4 cup Bragg’s liquid aminos or gluten free, low-sodium soy sauce + a bit of Sriracha (1-2 tsp.)

Chicken Thighs With Cauliflower Rice

makes 2 servings

  • dashes of olive oil, for cooking
  • 1lb chicken thighs
  • 1 large cauliflower, cut into florets + food processed into “rice”
  • 1 shallot, minced
  • 1 red bell pepper, diced
  • 1 garlic clove, minced
